A new Chinese restaurant is finally ready to roll out in Encinitas. Located in the Encinitas Village Shopping Center near Trader Joe’s and joining other restaurants like Cottage Encinitas and Isabelle Brien’s French Pastry Café, Dumpling Bar opens on Monday, September 16.
After 15 months of construction and renovation, this will be one of the few Chinese dumpling restaurants in North County with a display kitchen, where diners can watch a dedicated chef flatten rounds of scratch-made dough and fill the wrappers with meat or vegetables.
Backed by the team behind Taste of Hong Kong, Kanpai BBQ & Shabu, and China Max, the owners bring decades of culinary experience from China and the U.S. to the Encinitas locale. The 1,300-square-foot restaurant seats approximately 32 people inside with 11 tables in the dining room and two tables outside for sidewalk dining. During its early days, Dumpling Bar will be open from 10:30 a.m. to 8:30 p.m.
On the menu will be soup dumplings or xiao long bao, potstickers, steamed dumplings with Kurobuta pork and shrimp or vegan fillings, and chicken wontons in chili sauce. For an extra kick, customers can request wontons in chili sauce with added green Sichuan peppercorns. Housemade chili oil and chili crisp will also be available at each table.
The restaurant will also showcase a trendy offering that features “thumb buns”, or mini pan-fried buns, served in containers balanced atop tumblers of drinks like soda, Thai tea, or boba milk tea. And dumplings even extend to dessert when they’re filled with sweet red bean, chocolate, or black sesame.
Up next for the team is the resurrection of China Max on Convoy Street, slated to open by mid-November of this year. Dumpling Bar’s handmade dumplings will carry over to China Max, which will also serve dim sum and other classic Chinese dishes.

ENCINITAS, CA — Dozens of San Diego area students — including six in Encinitas — were named National Merit Scholarship semifinalists, the National Merit Scholarship Corporation announced this week.
The students are among more than 16,000 semifinalists in the running to be named a National Merit Scholar, and receive a $2,500 scholarship to help them further their education. Roughly 6,870 National Merit Scholarships worth nearly $26 million will be awarded next spring, according to the National Merit Scholarship Corporation.
To become a finalist, semifinalists must submit a detailed scholarship application that provides information about their academic record, participation in school and community activities, demonstrated leadership abilities, employment, and honors and awards received. They must also be recommended by a high school official, receive SAT or ACT scores high enough to qualify, and write an essay.
About 95% of the semifinalists are expected to attain finalist standing, and approximately half of the finalists are expected to win a National Merit Scholarship, earning the Merit Scholar title in the 70th annual National Merit Scholarship Program. Winners will be announced between April and July 2025.

ENCINITAS, CA — Fans of meteor showers have a doubleheader this week with two shooting star shows — the Delta Aquariids and the Alpha Capricornids — peaking early Tuesday and Wednesday, depending on weather conditions in Encinitas. The marine layer may obscure the meteors, but there is still time to go inland, away from city lights and fog.
The Delta Aquariids are expected to be the MVP in this shooting star show doubleheader, with about 15 or 20 meteors an hour visible under a dark sky. The Alpha Capricornids produce about five meteors an hour at their "plateau-like" peak Tuesday and Wednesday.
Perseid meteors are flying, too. The annual summertime favorite started in mid-July and is usually a prolific meteor shower, producing anywhere from 50 to 100 hours at the peak, which occurs Aug. 11-12 this year. This show, in particular, is known for producing fireballs — larger explosions of light and color that are brighter than typical meteors and whose "tails" last longer than typical meteor streaks.
The Perseids don't have the market cornered in the potential to dazzle skygazers. The Alpha Capricornids often produce very bright meteors, University of Warwick astronomer Don Pollacco told The Associated Press.
For meteor shower lovers, "one bright one is worth 20 faint ones," he said.
Most meteor showers originate from the debris of comets. The source of the Delta Aquariids is thought to be from the comet 96P/Machholz. The Alpha Capricornids originate from the comet 169P/NEAT.
When rocks from space enter Earth's atmosphere, the resistance from the air makes them very hot. This causes the air to glow around them and briefly leaves a fiery tail behind them — the end of a shooting star.
The glowing pockets of air around fast-moving space rocks, ranging from the size of a dust particle to a boulder, may be visible in the night sky.
The best time to view meteors is between midnight and the predawn areas. Get as far away from city lights as possible, and give your eyes 20 or 30 minutes to adjust to the darkness. Also, put your phone away.
"It runs your night vision," NASA meteor expert Bill Cooke told The AP.

A farm-to-table restaurant emerging next month in Encinitas may boast the shortest distance from the farm to its tables. Located just a few miles east of coastal Leucadia, Fox Point Farms is a new three-acre organic regenerative farm that is also the centerpiece of a planned community revolving around agriculture, aka an “agrihood”, that is the first to come online in San Diego.
Other such neighborhoods are in the works for Oceanside and Poway but Fox Point Farms is already up and running with many of the 250 surrounding townhomes, cottages, and apartments already filled with residents that include founder Brian Grover and his family. Grover worked with Schmidt Design Group on the overall five-acre development.
Working on horticultural land that once cultivated flowers for North County’s famous Ecke Ranch, farmer Greg Reese now grows food for several on-site venues that include Harvest, a daytime cafe on the ground floor of the main building that also functions as a marketplace and farmstand, selling a variety of fresh produce and personal care items made from herbs grown on the farm.
But the farm’s main client will be Haven Farm + Table, the 120-seat upstairs restaurant overlooking its rows of vegetables. With reservations now open ahead of its debut on August 10, it’s designed by local firm Tecture as a modern greenhouse space and light-filled showcase for seasonal cuisine.
A veteran chef with a long history in North County, helping to open area hotspots like Valentina, Moto Deli, and Hamburger Hut, Fox Point Farms culinary director Alex Carballo also has experience working closely with a farm, having been the executive chef of Stone Brewing Co. when the brewery operated Stone Farms in Escondido.
Haven will be led by Carballo and chef de cuisine Kelston Moore, co-founder of the Bad Boyz of Culinary. A private chef and a former contestant on the Food Network’s “Chopped”, Moore recently returned to San Diego from the St. Regis Deer Valley in Park City, Utah. Born in Barbados, the chef says his years in the Navy allowed him to travel the world, exploring global cuisines that have informed his cooking style. With opening dishes that include vegetable-forward plates like carrots al pastor with grilled apricots and smoked corn foam, confit tomatoes with housemade burrata, and summer squash agnolotti in garlic-sage butter, Moore plans to walk the farm with Reese each morning, adjusting the menu frequently, and tells Eater that he’s also planning on hosting guest chef dinners in the field.
The farm will also power Fox Point Farms Brewing Co., an organic brewery helmed by Brian Carl that will incorporate hops and other homegrown ingredients into its beer lineup. Carl is also overseeing a roastery, which will someday be fueled by beans from its own coffee plants.
In addition to offering a CSA program to its residents and neighborhoods, Fox Point Farms hopes to make its produce available to other area restaurants.
